The oldest known recipes a going back to The Mughal Empire which began in 1526 and, at it's peak, covered modern day India, Pakistan and Afghanistan.
Today, ancient practices and traditional recipes live on through restaurants such as award-winning Bangla restaurant in Bangor who cooked up a home style Deshi Chicken Dopiaza at the Chilli Festival that was held in Bangor Castle Walled Garden over the weekend of Saturday 9 and Sunday 10 September 2023 as part of Taste Autumn in Ards and North Down.
Not to give away all their secrets for creating this delicious Deshi Chicken Dopiaza, the Bangla have supplied us with a list of ingredients you will need to make this dish at home….
Deshi Chicken Dopiaza
Ingredient list, with method
2.5 Kg of Fresh diced of breast chicken
6oz of sunflower oil
1 table spoon of ginger and garlic as paste
3 large Shallots onion finely cut and 1 whole garlic and 1 small piece of ginger finely cut ,fry with oil and use a little of water until it forms a paste, then then use all chicken, and use all following spices:
1 tablespoon of Garam Mossalla powder, which can be freshly home made with over 20 spices
Half of tea spoon of roasted Cumin seeds
Half of tea spoon of mustard seeds
Half of tea spoon of pasporun with five spice
4 tablespoons of Mixed Powder with paprika powder, and Turmeric powder, Coriander powder, Zerra ( Cumin) powder and curry powder,
1 tablespoon of chilli powder
And, mix with chicken water and used 1 small 330Ml water .
After all the chicken is cooked, then mix with fresh vegetables :
3 large Red onion
2 Large white onion ( Spanish)
1 large Red Pepper
1 large yellow pepper
2 large Green pepper
All items cut into chunks
Then add,
8 pieces of Cherry Tomatoes
2 red chilli
2 green chilli
