Ingredients:
1 x 220 g rib eye steak
3 peeled king prawns
2 tbsp unsalted butter soft
Zest of a third of a lemon
Pinch smoked paprika
150 g x new potatoes cooked skin on in salted boiling water.
2 x cloves of garlic
1 tbsp flat leaf parsley chopped
30 x grams of rocket salad
Method:
First mince the garlic cloves and mix with the parsley, lemon zest, smoked paprika and butter, half crush the boiled potatoes with a fork season then add a splash of oil to non stick frying pan and sauté both sides until crispy set aside drained on kitchen paper season with salt.
Season the steak and sauté for 3 minutes both sides in non stick saucepan then rest for 5 minutes this will determine a medium cooking temperature. Wipe out the steak pan and on a medium heat add the prawns to sauté. Cook for only 2 minutes turning as you cook then add the garlic butter and coat over prawns, pour any rested steak juices into the pan and heat the steak back up in the hot butter.
Next, flash the drained potatoes in a hot oven then arrange on serving plate, slice the rested steak and arrange over potatoes and top with sauté prawns and garlic butter. Scatter over rocket leaf.
